Saturday was a very difficult day for me, being the fourth anniversary of my mum’s death.

So what better way to cheer myself up than with baking – and Saved by Cake by one of my favourite authors, Marian Keyes, to be more precise.

I couldn’t think of a better cake to bake than her three milks cake (otherwise known as a hug in a cake) and although I couldn’t eat it until yesterday due to it having to soak in a milky concoction of condensed milk, evaporated milk and double cream for 12 hours, it was worth every second – and made me feel much better while making it.

Possibly not one for the calorie counters out there though as I worked it out as 500 calories per slice!

If you don’t yet own this book then you really ought to go out and buy it for this recipe alone. This was the first cake I’ve attempted from it and I can’t wait to try the next one!

For my dinner, I also made a raspberry sauce and whipped up some cream to go with it. If I had to sum it up in one word it would be delicious!

Everyone at work seemed to really enjoy it too so I think I’ll be making this one again.

More importantly, mum would have loved it. This one’s for you mum x
