Mocha kisses

After a brief baking hiatus, what better time to make a come back than valentine’s day.

I am in no way the most romantic person in the world but I love a bit of valentine’s baking. Stuck for ideas, a quick Internet search came up with Rachel Allen’s mocha kisses on the BBC Food website.

As usual my baking didn’t go quite according to plan but despite reading the recipe wrong and putting a tbsp of hot water instead of a tsp (leading to emergency extra flour to save my dough), they came out pretty well and taste delicious.

In case you want the recipe:
– 175g self raising flour
– 75g caster sugar
– 75g butter
– 2 tsp instant coffee powder or granules
– 1 tsp hot water
– 1 egg
For the filling:
– 50g butter
– 100g icing sugar
– 3 tsp cocoa powder

It’s a pretty straight forward recipe. Simply mix the flour, caster sugar and butter until they form breadcrumbs then in a separate bowl mix the egg, coffee and water and add to the dry mixture, mixing until it forms a dough.

Sprinkle clean surface with icing sugar and roll out dough to about 4cm thickness and cut with heart pastry cutter then cook in preheated oven at 180 for 10-15 mins.

Leave to cool then mix the icing sugar, cocoa powder and butter and use to sandwich the biscuits together. Simples!
